Ingredients:
2.5 lbs russet potatoes
1 onion
2 cups chicken broth
2 tsp minced garlic
1/2 tsp salt
1/2 tsp pepper
dash white pepper (if you have it)
8 oz cream cheese
1 cup shredded cheddar
1 1/2 cups heavy cream
5-6 slices bacon
Directions:
1) Cut potatoes into 2 inch cubes.
2) In a crockpot, add potatoes, chicken broth, garlic, and seasonings. Mix well.
3) Peel and cut onion in half. Stick down into soup to cook for full flavor! (I pull mine out at the end because I don't want bites of onion in my potato soup, but you could leave it in if you like.)
4) Cook on low for 6-8 hours or high for 4 hours.
5) Once done, pull out the onion and toss it. Mash potatoes to your desired consistency.
6) Add cream cheese, cheddar cheese, and cream. Cover to let it melt up for a few minutes.
7) Stir well.
8) Once in individual bowls, add cheese, cooked/chopped bacon on top... (Or whatever toppings you like.)
9) Serve & Enjoy!!
