Enchiladas

Ingredients:

10 (approx) tortillas

1 1/2 lb ground beef

2 tbs flour

2 tbs butter

1 can red enchilada sauce

2 c chicken broth

3/4 tsp seasoned salt

1/2 tsp white (or black) pepper

salt & pepper to taste

2 can diced green chiles

2 c shredded cheddar


**other seasonings for ground beef, all to taste.


Optional:

green onions


Directions:

1) Cook ground beef. Season to taste. I use salt, pepper, garlic powder, onion powder, cumin, paprika, dehydrated minced onion. All to taste.

2) Add green chiles to cooked meat. I prefer to run mine through the food processor with a splash of water.

3) In another sauce pan, melt butter. Whisk in the flour and cook about 30 seconds - a minute, never stop stirring.

4) Add can of enchilada sauce. Then chicken broth.

5) Season enchilada sauce with seasoned salt and pepper. (Keep whisking as it thickens on low heat.)

6) Time to assemble! Heat tortillas so they're easy to work with. Cover tortilla with enchilada sauce. Then beef mix. Then add shredded cheese. Roll into enchiladas.

7) Place enchiladas in baking dish with a thin layer of sauce on the bottom (to prevent them from sticking).

8) Cover enchiladas with shredded cheese, then the rest of the red sauce.

9) Add green onions, if you like!

10) Bake at 350 until hot & bubbly.

11) Serve and ENJOY!
